Our product, the extra virgin olive oil CORTIJO ALBARRACÍN, is elaborated form a special mix of the olives called manzanilla, picual, hojiblanca and verdial. All of these come from our excellent olive trees cared by our professional staff and with the latest technology.

The characteristics of our olives are:

PICUAL.- Of great stability (171.9 E.R.) and rich in oleic acid (78.93 %). It is present in fruity olive oils and with personality.

HOJIBLANCA.- It is a variety which is used both for olive oil production and for seasoning. The efficiency of olive oil is low (18-20 %), harvesting takes place later than other olives but gives excellent green and yellow olive oils gentle and apt to be consumed directly. It contains a high quantity of vitamin E with a stability of (E.R. 40,9). It has a K270 level of 0.10, which indicates an olive oil of excellent quality and a K225 level very low (0.15) confirming its gentle in the palate.

VERDIAL.- It is a vigorous and productive variety. Early and costly harvesting due to the small size of the fruit. The efficiency of olive oil is excellent, near 30%.

The olive oil can achieve an extraordinary quality if the olives are protected from flies. The olive oil is sweet and gentle in the palate.

MANZANILLA.- Good vigour, production and fruits of good size and shape. The olive oil is of great quality and gentle in the palate.
