The legend tells us that Athenea and Poseidon were fighting for the sovereignty of Sais city. Gods decided to give the city to the one who did the best deed. Poseidon threw his trident to a rock and a horse came up, Athenea pounded the ground with her Spear and an olive tree with fruits in abundance came up. Gods decided to give Athenea the victory. Athens city was founded to commemorate her victory. The olive tree become the symbol of the Olympic Games.

The olive oil, word which comes from the Arab word az-zait, was used as an aliment, for lighting and medical purposes.
